
An easy, healthy family favorite
“Something Extra” Coleslaw
Fruits and vegetables and a lighter dressing make this coleslaw the perfect accompaniment for hamburgers, Sloppy Joes, or any grilled meat.
- One small cabbage, or half of a medium cabbage or the lower parts of Romaine lettuce leaves sliced very thin
- 2 to 3 scallions, finely chopped
- Add any or all of the following, sliced into small, thin rectangular slices (matchbook slicing):
- Apple
- Cucumber
- Red pepper
- Carrot
- Mayonnaise – just enough to moisten the slaw
- Thin with vinegar and oil salad dressing until you get it just the way you like it (more wet or more dry)
- Salt and pepper to taste
Wheat and Vegetable Sloppy Joes
Make your own Sloppy Joes go further by adding bulgar wheat and grated vegetables to the meat mixture. You can also make them vegetarian by substituting white beans or lentils for the meat.
- ¾ cup bulgur (wheat grain that has been parboiled, dried and cracked so that it cooks by covering it with boiling water! Look for it in the rice aisle)
- ¼ cup grated onion
- ¼ cup grated bell pepper
- ¼ cup grated carrot
- 1/2 cup grated zucchini
- 1 lb ground beef or turkey (or ½ lb of each)
- 1 8 oz can of tomato paste
- 1 8 oz can of tomato sauce
- ¼ cup ketchup
- ¼ teaspoon of chili powder
- 1 teaspoon apple cider vinegar
- Dash of hot pepper sauce
- Pour boiling water over bulgur in a bowl and set aside to soften
- Brown meat and set aside
- Grate vegetables and add to meat
- Add softened bulgur to meat mixture
- Combine rest of ingredients to make sauce and add to the meat and vegetables
Put all together into a large saucepan and simmer for 15 minutes.
Serve on hamburger buns or spoon into pita bread or tortillas.
